sorry there is no picture but it truly does not get easier than this!
kelly's slow cooked salsa chicken tacos
2 c chicken stock
2 c mild salsa of your choice
3 boneless, skinless chicken breasts
taco shells or tortillas
2 c shredded lettuce
1 c diced tomatoes
1 c shredded cheese
in a large saucepan, bring stock and salsa to a simmer over medium heat. add the chicken and cover the pan. allow to cook until tender, about 1 1/2 hours. remove chicken from the pan, reserving the liquid, and allow to cool slightly.
shred the chicken breasts and put in a bowl. add enough liquid to keep the chicken moist, but not too much or you will have some super soggy tacos!
fill taco shells/tortillas with chicken and your choice of lettuce, tomato, etc.
if you have leftover chicken but don't want tacos again, put the chicken back in the remainder of the liquid and add some yellow rice and vegetables (like zucchini and squash) for a delicious soup!
