chicken pot, chicken pot, chicken pot pie

am i the only one who follows the reference from "just shoot me"?  yes?  ...oh well.  if you are interested, you can check out the clip here.

but onto more important matters like dinner.  i know some of you may be thinking "chicken pot pie?!? is she serious!?!"  and i really am so just don't judge this one until you have made it; i promise it is divine!  so much better than the little frozen ones you grabbed in college and perfect for chilly winter weather!  wait...i just remembered it has been crazy warm here lately.  when i say warm, i mean i have worn shorts and the girls are loving life in flip flops but allowing flip flops sure makes it hard to get them in real shoes when it is "cool" and only in the 60's!  so just make it anyway..regardless of the weather where you live.

chicken pot pie
1T olive oil
1 small yellow onion, chopped
garlic to taste (i use the jarred equivalent of 2 cloves but the original recipe called for double that.  i am funny about garlic to i'll let you be the judge here.)
2 tsp fresh thyme, chopped or 3/4 tsp dried
kosher salt and fresh ground pepper
1/2 cup dry white wine*
1T all purpose flour
2/3 cup chicken stock or low sodium broth (canned)
1 16oz jar of alfredo sauce
3 cups shredded rotisserie chicken
1 small can sweet peas (i prefer le sueur brand)
1 small can baby carrots, chopped (i often can only find regular size cans so i use about 1/2)
1 small can corn (i prefer sweet but it is up to you; just don't use cream corn)
1 small can green beans
4 oz fresh mushrooms
4 9" pie crusts (this recipe makes 2 regular pies or one huge deep dish pie)
1 egg, lightly beaten

preheat oven to 425F.  line a baking sheet with aluminum foil.
heat the oil in a large sauce pan over medium heat.  add the onion, garlic, thyme and season lightly with kosher salt and pepper.  cook, stirring frequently, until the onion is soft and translucent; about 5-7 minutes. add the wine and cook until it evaporates but the onion is still moist; don't over cook; about 2 additional minutes.  sprinkle the flour over the onion and cook about 1 minute.  add the stock and stir until incorporated and slightly thickened.

remove the pan from heat.  stir in the alfredo sauce, chicken, peas, carrots, corn, green beans and mushrooms.  adjust your seasonings with more salt and pepper if needed.  divide the filling among your two pies and brush with the beaten egg.

place the pot pies on the baking sheet and bake for 35-45 minutes.  allow to stand for 10 minutes before serving. 

noteworthy...
the filling can be made a day ahead and refrigerated.  when ready to bake, assemble the pie and bake as directed.
you can freeze one of the pot pies to enjoy later.  just do not brush the one you plan to freeze with the beaten egg before you cover with foil and put in the freezer for a "rainy day".  when you are ready to cook, bake, covered with foil, for 30 minutes at 425F.  after 30 minutes, remove the foil, brush with the beaten egg and bake until the crust is golden; about another 30 minutes.  enjoy...thinking, i had no idea chicken pot pie could be so delicious!

*as far as the wine...i made the pot pies a couple of weeks ago and didn't have any wine on hand and didn't see the need to buy any as i am pregnant and it would have gone to waste.  i substituted additional chicken stock and it worked just fine.  i was missing that wonderful "layer" of flavor that the wine brings but we all survived...i was out of green beans and mushrooms that night too and jay and the girls still managed to eat their fair share!

i hope you enjoy!  it is one of my favorites...a yummy comfort food at its best!  i most often take our additional pot pie to a friend with a new baby...i guess that will soon be me so next time i make them, i'll place one in the freezer for us!

a note to self...

dear sara,
please do not continue to let yourself get distracted when putting children in the car.  i am glad you seem to be able to always get the girls properly secured in their car seats and i know there is a third baby on the way so things are likely to get worse but please try and get it together. 
as your 3 year old would say, "that is not a good idea" to put your cell phone on the roof of the car.  i know you were loading the children in the car to take them to get ice cream; your "mommy of the year moment" for the day.  and i know your car is in the shop and you are driving jay's and the doors are heavy and you don't like to open them unnecessarily but let's make finding a "safe haven" for keys, purses, iPhones, drinks, etc a worthwhile cause and open the bloody door to put items actually in the car; not on top of it! 
remember a few years ago when you put your new point and shoot camera on the roof of the pilot while loading up children to head to birmingham for christmas?  and then forgot all about putting it in the car with you before pulling out of the garage?!?  remember the tears that stressful morning thinking you had ruined or lost the new camera your sweet husband picked out for you?  that story had a happy ending because you miraculously left the camera in the box with all original packaging and there was something to protect the precious cargo from the impact of the fall.  
apparently, that memory is not as vivid as it should be... so i beg of you, next time you think of leaving something on the roof of the car, remember this picture.

p.s. something tells me using your old LG phone will help keep this memory fresh...

i fear there are additional pieces on the side of johnson road but as soon as i found the sim card, i called it a night.  what should have been a quick trip to krispy kreme for a pregnant donut craving and mcdonalds for a strawberry sundae, turned into an hour and a half, several trips up and down johnson road, a stop at mcdonalds and sonic but no krispy kreme.  you were still looking for the phone when you went to mcdonalds to find out they no longer have strawberry!  so you trekked to sonic for a strawberry sundae; you couldn't fail at your "mommy of the year moment".  and you have wanted that donut since wednesday so what is waiting a few more days...you had to find the phone and find the "phone", you did.

wait for it...

i am giving it an hour before officially calling it but i think all may be working correctly around here again!  please tell me it was a fluke and not the fact that the computer was turned off last night and picasa needed a reboot!  wait...it was off the entire time we were gone for Christmas and that didn't help so i am going with a fluke and not operator error.

so...i have re uploaded the latest picture of baby 3 and the pictures from the Christmas post.

and baby girl makes 5!

and you read the title correctly...i typed "baby girl"! jay and i found out a few days before Christmas that God has another little girl in the plan for our lives; for those of you keeping count, that is 3 little girls. we could not be more thrilled!
well maybe that isn't true...i could, technically, be more thrilled.  jay could give one of my two suggested names his stamp of approval or at least come up with a suitable alternative.  but we are not known for naming babies quickly!  i am pretty sure i was 30+ weeks before we named hadley and audrey wasn't quite as bad but it wasn't like my sister in law who found out this morning and we are already calling the baby by name!
for those of you trying to keep track of statistics...i am officially 24 weeks and 2 days with a due date of april 22.  but after my emergency section with hadley, jay and i are in the business of scheduling deliveries so we'll pick a date closer to time.  lots going on around here as we prepare for this new little bundle and a move; much to be thankful for and several things that can be quite overwhelming if i let them.  i am praying we can find a house and settle in meridian before she arrives but that may not be God's plan and who am i to argue with that?  i know whatever works out will be for the best; it always is.  as much as i don't want to relocate with a 4 year old, 2.5 year old and brand new baby, i would much rather have my dr here deliver so...there are pros and cons for moving before and after...we just have to wait and see what pans out.

i have never been one for "resolutions" but i guess i have a few this year...
relax and don't get so worked up over things; there is so much going on, this could be a challenge!
show love more...that is easier when i am not allowing myself to get worked up!
start each day with my focus on my Lord, Jesus Christ, and all else will fall into place with His guidance...i think that covers any and all other resolutions i could possibly have so maybe i really just have one.

if you are looking for a wonderful bible reading plan to start 2012, i highly recommend the bible in 90 days!  it is how i started my 2011 and it was a wonderful experience i plan on taking part in again...it is a great way to start the year!
