*this post was originally written last thursday...but blogger was in the middle of "maintenance" when i hit "publish". ugh...that just added to my need for a deep breath but all is much better now. i am just getting another chance to sit down and hit "publish". happy monday to all!
i am taking a deep breath for so many reasons...
one of which is that there are so many i can only remember a few of them!
first...i am mentally exhausted...life has me a bit run down at the moment. nothing life changing going on, just the toll day to day life takes. so i am most looking forward to a "refresher" next weekend at the beach with dear friends and my even dearer husband. i will miss my children terribly but i am hopeful that i will be able to recharge the mom tank!
second...i am in the middle of "redecorating" our bedroom...though i don't know if you can call it redecorating when it was really never decorated to begin with. i will do a better post on this later when the bed is in and drapes are done but here are some pictures in the mean time. i don't know if i have mentioned this before but when i get a project, it is like a "bee in my bonnett" and i have a hard time separating myself from it until it reaches completion! i am working on the drapes now and there will be a tutorial with that one...maybe i am not searching correctly but i simply couldn't find a tutorial to make lined drapes exactly how i wanted them so i am going to "put this to paper" for all of you out there.
third...this computer is driving me absolutely batty! i have time to blog again but it takes so stinking long it is almost not worth it. we have ordered a new one and it should be here next week and i am beside myself with the exciting thoughts of one that runs as it should. jay feels something surely has "died" inside ours and i am anxious to see just what that was (not that i will probably have a clue what it actually is but it will be nice to see what the problem has been all this time!)
and without further ado...the first recipe for " the summer of recipes"
Spinach Lasagna1 box oven ready lasagna noodles
1 1/2 jars marinara sauce (tomato and basil is my personal preference)
10-14 oz frozen spinach, thawed
15 oz ricotta cheese
8 oz cream cheese
1 1/4 c parmesan cheese
1 c shredded mozzarella
Mix spinach, cream cheese, ricotta and parmesan in a bowl and set aside; adding salt and pepper to taste. Cover the bottom of 9x13 pan with a thin layer of marinara. Place one layer of noodles on top of sauce, followed by 1/2 of spinach mixture. Lightly sprinkle some basil on top. Add second layer of noodles and 1/2 of remaining marinara. Then top with remaining spinach mixture and sprinkle with basil again. Add final layer of noodles, remaining sauce and sprinkle mozzarella on top. Bake, covered, at 350 for 45 minutes. Remove foil and bake another 10-15 minutes. Let stand for 5ish minutes before serving.
