lets all take a deep breath and smell the spinach lasanga

*this post was originally written last thursday...but blogger was in the middle of "maintenance" when i hit "publish".  ugh...that just added to my need for a deep breath but all is much better now.  i am just getting another chance to sit down and hit "publish".  happy monday to all!

i am taking a deep breath for so many reasons...
one of which is that there are so many i can only remember a few of them!

first...i am mentally exhausted...life has me a bit run down at the moment.  nothing life changing going on, just the toll day to day life takes.  so i am most looking forward to a "refresher" next weekend at the beach with dear friends and my even dearer husband.  i will miss my children terribly but i am hopeful that i will be able to recharge the mom tank!  

second...i am in the middle of "redecorating" our bedroom...though i don't know if you can call it redecorating when it was really never decorated to begin with.  i will do a better post on this later when the bed is in and drapes are done but here are some pictures in the mean time.  i don't know if i have mentioned this before but when i get a project, it is like a "bee in my bonnett" and i have a hard time separating myself from it until it reaches completion!  i am working on the drapes now and there will be a tutorial with that one...maybe i am not searching correctly but i simply couldn't find a tutorial to make lined drapes exactly how i wanted them so i am going to "put this to paper" for all of you out there. 

 
 
 
third...this computer is driving me absolutely batty! i have time to blog again but it takes so stinking long it is almost not worth it. we have ordered a new one and it should be here next week and i am beside myself with the exciting thoughts of one that runs as it should. jay feels something surely has "died" inside ours and i am anxious to see just what that was (not that i will probably have a clue what it actually is but it will be nice to see what the problem has been all this time!)
and without further ado...the first recipe for " the summer of recipes"
Spinach Lasagna
1 box oven ready lasagna noodles
1 1/2 jars marinara sauce (tomato and basil is my personal preference)
10-14 oz frozen spinach, thawed
15 oz ricotta cheese
8 oz cream cheese
1 1/4 c parmesan cheese
1 c shredded mozzarella
Salt
Pepper
Basil, dried

Mix spinach, cream cheese, ricotta and parmesan in a bowl and set aside; adding salt and pepper to taste. Cover the bottom of 9x13 pan with a thin layer of marinara. Place one layer of noodles on top of sauce, followed by 1/2 of spinach mixture. Lightly sprinkle some basil on top. Add second layer of noodles and 1/2 of remaining marinara. Then top with remaining spinach mixture and sprinkle with basil again. Add final layer of noodles, remaining sauce and sprinkle mozzarella on top. Bake, covered, at 350 for 45 minutes. Remove foil and bake another 10-15 minutes. Let stand for 5ish minutes before serving.

"audrey can't want it"



that is a statement heard often around this house.  sometimes hadley is right and audrey in fact does not want whatever has been offered to her but more often than not it is hadley telling us there is something she does not want audrey to play with.  perfect case in point, the iron and ironing board she received for her birthday.  as you can see, she has "hidden" it in her closet and put the iron where she thinks audrey can't reach it.

under the sea

who doesn't love a little time at the aquarium?  these pictures are pitiful and are really just to prove casey and i took the girls...it was a handful of a morning and the girls had a good time but pictures were, unfortunately, an after thought. 
 
 
 

by far the funniest (or saddest) story of the day was hadley having an absolute meltdown at a woman dressed in "authentic argentinian garb" (a veggie tales reference for all you fans out there)!  the woman was actually dressed in a traditional islamic burqa and so hadley could only see her eyes and totally lost it...i was so grateful that there was a HUGE ray swimming over head and i totally thought she was freaked out by that so hopefully all other people did too.  i am praying she outgrows this fear of "costumes" soon...  if you ask her about her time at the aquarium she simply says "i scared of the people".  oh brother; it will be a long road ahead of us if we keep this up.

arts, crafts and a little baking

good morning all!  i am still catching you up on the activities i neglected to blog about while i was immersed in the b90 days and then getting the house back in order after neglecting it as well!  i am slowly getting the blog caught up and i think by mid next week, at the latest, we will all be on "real time" here!  

hadley and i made sugar cookies for her easter party at mother's day out and she was such a great helper! 
 
 
we made bunnies, butterflies and easter egg shapes! will someone tell me how to get sugar cookies thin enough that they do not expand so much while baking that they ruin the shape but thick enough that they aren't like wafers! there are many things i have figured out when it comes to the kitchen but this is so not one of them...tips are appreciated! jay LOVES sugar cookies with icing and i suppose i'll just keep making plain old round ones as i am in no hurry to make "wafer sugar cookies" again...i am sure dr forrest (our dentist) would love us as we'd all be breaking teeth if we ate many more of those!

we have also done some recent painting.  the girls have VERY different styles and i can't help but wonder if it is an indication of their different personalities or just their age.  if you can't tell in the pictures, audrey took her brush and smeared her paints all around together on her plate and then put it to paper...however hadley kept all colors separate.  i love watching them grow!  what a blessing to be here with them...
   
and lastly...a little something to look forward to here on the blog.  i am always on the hunt for good recipes.   so i decided i was going to start sharing some of my favorites in case you all find yourselves on the same hunt.  the only thing is, i seem to take most unappetizing pictures of food so you will just have to use your imagination until i can get that mastered and trust me that they are all quite delicious and mcfarland children approved!  so stay tuned...

at the beach with papaw and lala

my dad and laura were at the beach over easter weekend so we drove over to spend the day with them on saturday before celebrating easter sunday in mobile.  i just wanted to share a few pictures from the first beach trip of the year...my brother, sister in law and carter will be at the gulf this weekend and the girls and i are all hopeful to join them for some more quality family time!

cries as if it is some sort of torture!  unless you give her something to chew on; those pesky incisors!  
oh and the only way i could be more in love with that bathing suit of theirs is if it stayed on their shoulders better!  i feared that when i bought it but it has a matching purple skirt/cover up and hadley was in LOVE with it so we got them and i hoped for the best...it is still cute no matter how bothersome!
